Sunday:  Creamy Lemon Basil Pork Chops and Cauliflower Gnocchi
Time in Kitchen:  2 hours

Shopping List4 medium to large pork chops, 1 tsp. dried sweet basil, ½ tsp basil, 1 Tbsp lemon juice, ½ cup coconut milk, ¼ cup bone broth, 1-2 Tbsp cooking fat of choice, 1 baked russet potato, 1 head cauliflower, 2 Tbsp tapioca flour, 1 whole egg, 1 egg yolk, 1/2 cup grated Parmesan, salt , olive oil

Monday: Zoodle Pad Thai with Lemongrass Chicken Wings*
Time in Kitchen: 5 minutes for marinade, 30 minutes in the evening

Shopping List: 4 medium zucchini (about 10-ounces each), 2 tsp coconut oil, 1 tbsp minced garlic, 3 green onions, 2 eggs, ½ cup unsalted peanuts, ¼ cup cilantro, chopped, ¼ tsp salt, 2 tbsp coconut/palm sugar, 3 tbsp coconut aminos (soy sauce), 1 tbsp rice wine vinegar, 2 tbsp lime juice, ½ tsp paprika, 2 tsp sriracha sauce, ¼ tsp red chili flakes, 1 stalk lemongrass, 2 1/2 pounds chicken wings, 2 cloves garlic, 1 shallot, 2 teaspoons minced ginger, 1/4 cup fish sauce, 2 tbsp fresh lime juice, 2 tbsp light avocado oil, 2 tbsp coconut sugar, 1 tbsp honey, 1/2 tbsp soy sauce, 1 handful peanuts, chopped, Chopped cilantro (optional)

Tuesday: Paleo Swedish Meatballs and Carrot Beet and Apple Salad with Mint and Cumin Vinaigrette
Time in Kitchen: 35 minutes*

Shopping List: 1 lb ground beef, 1 lb ground pork, 2 egg yolks, 1 tbsp parsley, 1 tsp sea salt, 2 tsp black pepper, ¼ tsp cinnamon, ¼ tsp nutmeg, ⅛ tsp ground cloves, ¼ sweet onion, 2 garlic cloves, 1½ tbsp of lard or cooking fat, ¼ sweet onion, 14 oz full-fat coconut milk, 2 cups of beef broth, 2 tbsp of Butter (or Ghee), 3 tbsp of tapioca flour, salt, 2 large carrots, 1 large crisp apple, 2 medium beets, 1 cup mint, roughly chopped, ¼ cup apple cider vinegar, ¼ cup olive oil, 1 tbsp honey, ¾ tsp ground cumin

I will make the meatballs for 10-12 minutes on 200 C to save time.  This allows me to make the sauce while the meatballs cook.

Wednesday: Leftovers

Thursday:  Paleo Chick-fil-A Chicken Nuggets and Crunchy Slaw
Time in Kitchen: 40 minutes

Shopping List: 1 lb chicken breasts, 1/3 cup dill pickle juice, egg, beaten, 1 Tbsp coconut milk, 1 Tbsp coconut flour, 1 Tbsp arrowroot flour, 1/2 Tbsp paprika (sweet or smoked), 1/2 tsp sea salt, 1/2 tsp black pepper, 1/2 tsp onion powder, 1/4 tsp garlic powder, Coconut oil for frying, 1 Red Bell Pepper, 2 Kohlrabi (or use up unused red cabbage from Monday), 2 Carrots, ½ cup Mayonnaise, 2 Tbsp Apple Cider or Red Wine vinegar, 2 tsp Honey, ½ tsp Garlic powder, ½ tsp Onion powder, ½ tsp Salt, ¼ tsp Pepper

Friday: Pork Goulash (pg 120 The Paleo Slow Cooker)* with Roasted Garlic Cauliflower Celery Root Mash
Time in Kitchen:  20 minutes in the morning (or 5 if you skip meat browning), and 40 in the evening

Shopping List: (MASH ONLY LIST) 1 garlic head, 1 tsp olive oil, 1 large cauliflower head, 1 celery root, 4 Tbsp ghee, sea salt, pepper

*There are many goulash recipes out there to try, but this is my favorite because of the addition of sauerkraut.  Find a recipe for yourself, or buy the book (affiliate link).

Saturday:  Sous-vide Steak and Steamed Green Beans with sauteed mushrooms and caramelized onions
Time in kitchen:  20 Minutes, but the steak has longer passive time

Shopping List:  salt, black pepper, butter, steaks, 1 bunch beans, 2 large onions, and 1 lb cremini mushrooms, olive oil, and butter
