Plan: July 23-29, 2017

Ack!  My kids now have soccer practice that takes me out of the house in the evening dinner-prep time three days a week.  I am really struggling to come up with enough crockpot and make ahead meals without eating stew over and over again.  It feels like I really need and Instant Pot, but I keep telling myself to wait until we get back to the US to buy one.  It’s first on my list to get while we wait for our household goods to arrive.

Sunday: Leftover Curry from Saturday
Making curry takes a long time, but I can always guarantee that we’ll have leftovers enough for at least one meal.  I’ll likely make rice to go with the leftovers since I don’t relish making naan two days in a row.

Monday: Quick and Easy Gazpacho with Deviled Eggs*
Time in Kitchen: 30 minutes

Shopping List: 1 hothouse cucumber, 2 red bell peppers, 4 plum tomatoes,1 medium red onion, 3 cups tomato juice, 3 garlic cloves, 1/4 cup white wine vinegar, 1/4 cup extra-virgin olive oil, 3 tsp salt, 1 tsp ground black pepper, 8 large eggs, 4 tbsp clean mayo, 1  tsp apple cider vinegar, 1 teaspoon yellow mustard, 1/4 tsp black pepper, 1/2 tsp sea salt, 1 tsp paprika for garnish
*The shopping list is four a doubled recipe because there is no way my family is content with just one egg a piece

Tuesday:  Chicken* Meatballs with Pineapple Sauce and Garlic Green Beans
Time in Kitchen: 45 minutes

Shopping List:  2 lb ground chicken*, 1 pineapple, diced, 1 egg, 1 tsp paprika, 1 tsp onion powder, 1 tsp garlic powder, Sea salt and freshly ground black pepper, 4 tbsp. ketchup, ¼ cup coconut aminos, 1 tbsp. fresh ginger, minced, ½ cup pineapple juice, 1 tbsp garlic, ½ tsp red pepper flakes, 2 tbsp raw honey (optional), 1 lb green beans, 6 cloves of garlic, 1/2 tsp- 1 tsp salt, oil for frying, ice for water bath
*Any ground meat is fine, but you may need to omit the egg for fattier meat that will bind together fine without it.

Wednesday: Paleo Crockpot Chili
Time in Kitchen: 15 minutes in morning

Shopping List: 2 lbs of ground beef or turkey*, 1 onion, 3 cloves of garlic, 1 red and 1 green bell pepper, 1 cup of carrots, 1 cup of celery, 1 jalapeno, 28-ounce can of crushed or stewed tomatoes, 14-ounce can of diced tomatoes, 15-ounce can of tomato sauce, 3 tbsp chili powderm 1 tbsp oregano, 1 tbsp basil, 2 tsp cumin, 1 tsp salt, 1 tsp pepper, 1 tsp onion powder, 1/2 tsp cayenne, Garnish (optional but highly recommended!): About 4 strips of cooked bacon, crumbled, 1 or 2 avocados, diced
*I’ll use beef stew meat because we already have to ground-meat dishes this week. Plus, I think it’s tastier.

Thursday: Sous Vide Burger Bowls
Time in Kitchen: 30 minutes to prep 30 to cook (or you can sous vide for longer if you are going to be out of the house in the evening)

Shopping List: 1 lb ground beef, salt and pepper, lettuce, mushrooms, tomatoes, pickles, honey mustard dressing

Friday: Crockpot Chicken Enchilada Soup
Time in Kitchen: 10 minutes in the morning

Shopping list: 1.5 lbs boneless, skinless chicken thigh (or breasts, which won’t be as juicy), 1 can crushed tomatoes (fire roasted if available), 1 bell pepper*, 1 onion, 3 clove garlic, 2 cups bone broth, cumin powder, chili powder, oregano, smoked paprika, salt, pepper
I will add another bell pepper and some mushrooms to amp up the veggies

Saturday:  Chili Lime Chicken Wings and Sesame Ginger Bok Choy
Time in Kitchen:  5 minutes to prep (marinate chicken for several hours ahead of time) and 20 minutes grill time

Shopping List:  ½ medium onion, 2 jalapeno peppers (or 1 serrano pepper), 3 garlic cloves, ½ cup cilantro,freshly ground pepper, 2 limes, 2 tbsp Paleo-friendly fish sauce, 2 tbsp coconut aminos, 6 lbs chicken wings and/or drumsticks, 1-2 tbsp melted fat of choice, 4 limes- cut into wedges, 4 baby bok choy , cut in half lengthwise, tsp sesame oil, 1 tsp kosher salt, 1/4 tsp fresh ground black pepper, 1/4 tsp ground ginger, tsp toasted sesame seeds
