Sunday: Laap-Inspired Lettuce Wraps
Time in Kitchen: 15-20 minutes

Shopping List: 1 lb ground turkey or pork, 1 lime, 1 small red onion (or 2 medium shallots), sugar, fish sauce, fresh ginger (sub powdered if needed), ½ cup of mint, ½ cilantro, 1 clove of garlic, 1 tbsp oil, 1 head Bib/Butter lettuces, 1 English cucumber, 2 carrots, 1 bell pepper

Monday: Slow Cooker Creamy Southwest Chicken* over Zoodles
Time in Kitchen: 10 minutes (plus 6 hours in crockpot)

Shopping List: 1.5 lbs boneless chicken thighs or breasts, 1 tbsp chili powder, 2 tsp paprika, 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp garlic powder, ½ tsp cayenne pepper, 2 red bell peppers, sliced, 1 cup chicken broth, ¼ cup fresh lime juice, 1 tbsp arrowroot starch, ½ cup coconut milk (full fat) or half and half, fresh cilantro to garnish, salt and pepper to taste, 2-3 zucchini

*I plan to double the recipe so I can shred the chicken and use it in Wednesday’s enchiladas.  Shopping list reflects a single recipe

Tuesday:  Middle Eastern Potato Salad and Souvlaki Pork Loin Roast
Time in Kitchen:  2 hours 10 minutes (including marinade time)

Shopping List: 6 medium-sized gold potatoes, 5 tbsp olive oil, 10 garlic cloves, 2 tsp coriander seeds, 1 tsp crushed red pepper flakes, more for later, 2 tsp ground turmeric, 1 lime, 1 packed cup chopped fresh cilantro leaves, 1 packed cup chopped fresh parsley leaves, 1 packed cup chopped fresh dill, Salt and pepper, 3 lb to 4 center loin roast of pork, 5 tbsp fresh lemon juice, 1 tsp lemon juice, 3 tbsp balsamic vinegar, 3 tbsp smoked paprika, 3 cups Greek yogurt drained, 6 inch piece of English cucumber, 3 tbsp finely chopped fresh oregano

Wednesday:  Grain-Free Enchiladas
Time in Kitchen: 1 hour

Shopping List: 1 lb ground beef, chicken or shrimp, 1 cup shredded cheese, sprinkle of cumin and garlic, 1/2 head of iceberg lettuce, shredded, 1 tomato, enchilada sauce: 28 oz can whole peeled tomatoes, 3 tbsp chili powder, 3 tbsp taco or Southwestern seasoning, half an onion, 3 cloves garlic, 1 jalapeno, ½ tsp salt

Thursday: Unstuffed Cabbage Bowls
Time in Kitchen: 30 minutes

Shopping List: 4 tbsp. EVOO, 1 small onion, 2 garlic cloves, 1 ¼ pounds ground beef (567 g), ¼ teaspoon cinnamon, 1 teaspoon fresh thyme leaves, 8 ounces tomato sauce, 1 head green cabbage,½ cup parsley, Sauerkraut, for garnish

Friday: Coconut Lime Chicken and Sesame Ginger Broccoli
Time in Kitchen: 40 minutes

Shopping List: 4 skinless boneless chicken breasts, about 1 1/2 pounds, 1/4 tsp sea salt, 1/4 tsp black pepper, 1 tbsp coconut oil, 1/2 cup red onion it came out to 1/2 onion for me, chopped, 1 whole red chili chopped optional, 1 cup organic chicken stock, 2 tbsp lime juice about 1 large lime, 1 tbsp chopped cilantro, 1/2 tsp red chili flakes, 1/2 cup full fat coconut milk. 1 tbsp arrowroot starch, , 2 tbsp extra virgin olive oil, 2 cloves garlic, 1 lb broccoli florets, ½ tsp salt, ⅓ cup coconut aminos, ½ tsp ground ginger, 1 tbsp white sesame seeds

Saturday: Baked Chicken Legs and Rot Kohl
Time in Kitchen: 50 minutes

Shopping List: 4-8 chicken legs, seasoning of choice, 1 red cabbage (green works great as well), 1 medium onion, thinly sliced, 3 Tbsp of duck fat (bacon grease would be delicious as well), 1 tablespoon sherry vinegar, 1 bay leaf, Kosher salt and pepper, ½ cup water, 1 apple, peeled and grated
